Comforting Chicken Noodle Soup

When the weather turns chilly or you’re simply in need of a warm hug in a bowl, there’s nothing quite like homemade chicken noodle soup. It’s cozy, soothing, and packed with nourishing goodness. Best of all, you can make it your own—because your soup, your rules!


What You’ll Need

  • Chicken – 1 pound of boneless, skinless chicken breasts or thighs (whichever you prefer)

  • Vegetables – 2 carrots (sliced), 2 celery stalks (sliced), and 1 onion (diced)

  • Garlic – 2 cloves, minced (because garlic makes everything better!)

  • Chicken broth – 8 cups (homemade or store-bought)

  • Egg noodles – 2 cups (or your favorite noodle substitute)

  • Olive oil or butter – 2 tablespoons

  • Bay leaf – 1, for added flavor

  • Fresh herbs – Thyme or rosemary (a sprig or a teaspoon of dried)

  • Salt & pepper – To taste

  • Lemon juice – A splash at the end for brightness (optional but highly recommended!)


Instructions

  1. In a large pot, heat the olive oil (or butter) over medium heat. Add the diced onion, carrots, and celery, and sauté for 5 minutes until softened.

  2. Add the minced garlic and cook for another minute until fragrant.

  3. Place the chicken in the pot and pour in the chicken broth. Add the bay leaf and thyme (or rosemary).

  4. Bring the soup to a boil, then reduce the heat and simmer for about 20-25 minutes, or until the chicken is fully cooked and tender.

  5. Remove the chicken and shred it using two forks.

  6. Return the shredded chicken to the pot and add the noodles. Simmer for another 8-10 minutes, or until the noodles are tender.

  7. Season with salt and pepper to taste. Add a splash of lemon juice for a burst of brightness.

  8. Remove the bay leaf before serving and garnish with fresh parsley if you like.


Make It Your Own

  • Add some baby spinach or kale for extra greens.

  • Prefer rice? Swap out the noodles for wild rice or quinoa.

  • Feeling adventurous? A dash of cayenne pepper or a sprinkle of parmesan can add a fun twist.
